Seth Adams is the Executive Chef and Co-owner of Riverhorse on Main, best described as “an upscale eclectic American restaurant,” located in the heart of Old Town Park City, Utah. Chef Adams keeps his guests happy by consistently delivering long-standing, crowd-pleasing menu favorites, as well as featuring new, cutting-edge creations. His passion and creativity burn bright in the kitchen, but he also enjoys spending time in the dining area getting to know his guests and listening to what they have to say - all while local musicians keep things humming in the background.

Chef Adams’ culinary career began as a teenager working in catering jobs that led him to culinary school, but it was the skiing that cemented him to Park City. He worked his way through the restaurant business in positions of banquet chef, sous chef, and executive sous chef at restaurants including Deer Valley's Snow Park Lodge, Morton's Steak House, and Grand Summit at Canyons Village. In 2004 Chef Adams was hired as executive chef at Riverhorse On Main. Adams and a partner bought the popular Main Street eatery in July 2011 and transformed the atmosphere to the trendy, urban setting it is today. “I love what I do. I love the people and I love cooking simple foods in ways that taste good and look good. It's what I would want to eat,” says Adams.

FAVORITE TASTE ADVENTURES FROM THE INVENTIVE RESTAURATEUR

1. As Executive Chef and Co-owner of one of the oldest and most distinguished restaurants in Park City, what are some key factors that have attributed to the longevity and success of your restaurant?  

A major factor is in the consistency – in the staff, the service, and the food. There are some signature dishes on the menu and if I remove those dishes, then my neck will be slashed like the local Rainbow Trout with a pistachio nut crust and pomegranate & fennel salsa; the Trio of Wild Game which includes North American Buffalo, venison and elk with a port reduction and Oregon huckleberry; and the Riverhorse classic Macadamia Nut Crusted Alaskan Halibut. Earning a few restaurant awards keeps them coming (and coming back) too.

2. What are your top five favorite restaurants in Summit County and why?

  1. Shabu – it’s a family-owned Asian restaurant and they are family friends. We (my wife and I) also like to support the locals.

  2. Powder Restaurant at the Waldorf Astoria – it’s close to home and love that there is a valet (makes things easier with kids). 

  3. Yuta at The Lodge at Blue Sky – a new favorite. It just opened and has a nice tuna appetizer and short rib dish.

  4. Deer Valley Grocery Café – besides the good food, there’s a lot to keep the kids entertained outside with the ducks and paddle boarding on the lake.

  5. Oh, and my kid’s favorites – Harvest Park City or Five5eeds. I’m taking my kids there at least once a week.

3. WHAT DO YOU LIKE TO DO ON THE EAST SIDE OF THE COUNTY?

I like to go to Woodland Biscuit Company in Woodland, UT for breakfast. The State Road Restaurant & Tavern at High Star Ranch has a pretty awesome brunch and a nice patio to enjoy it on. It’s also a good spot to go to before or after the day’s adventure in the Unitas.

 

4. DESCRIBE YOUR CULINARY GUILTY PLEASURE?

Anything that involves ice cream…especially after the kids go to bed. For some local ice cream shops, try Java Cow Coffee & Ice Cream or Rocky Mountain Chocolate Factory.

 

5. What dish or meal around Summit County are you most envious of?  Why?

Red Bicycle Breadworks. I wish I could make bread that good. I just don’t have the space. I’m also envious of their ovens.

 

6. WHAT DO YOU DO FOR A “NIGHT ON THE TOWN”?

We (my wife and I) would probably go to Handle for dinner, then venture up Main Street to The Spur Bar & Grill for some cocktails then head to Downstairs for some dancing – all in that order!
